21 Day Sugar Detox

And so we kick of week two of the Detox! Can you believe how it has flown by – I can't! I am still sick and not feeling great. The worst part is I can’t train which really annoys me. But other than the sinuses and throat (due to the air/allergies) I feel great. My body is responding well and I can notice significant changes in my digestive system. All good things! I am expecting great things from this week so lets wait and see!

In the meantime I will keep believing in my ability to do whatever I put my mind too. No matter how big or small. You have to believe in yourself. And I can say from experience that whatever I have put my mind too has come true for me because I believed in myself, I did the hard work and I never gave up. O yes did I mention the hard work? Lots of it! Nothing worth having will ever come easy.

Brunch: 3 Egg Scramble, Bacon & Coconut flour crumpets and freshly blended carrots (juice)

Lunch: Stir fried vegetables with beef strips

Dinner: Few pieces of beef kebab, mung bean salad, spinach & wallnut salad

Fluids are still a challenge for me – but I managed to drink my 3L for today

Delicious Easy to make Coconut Pancakes (Crumpets)

*Dairy Free Gluten Free Sugar Free*

  • 1/4 Cup coconut flour
  • Pinch of Salt
  • 1/2 Teaspoon Baking powder
  • 1/4 Cup Almond/Coconut Milk
  • 4 Eggs
  • 3/4 Teaspoon Vanilla Essence

Sift all dry ingredients together. Mix all wet ingredients. Pour wet ingredients into the dry ingredients and mix until a nice batter is formed without any clots. Cook them the same as you would any other crumpet/pancake. Approximately 2min each side depending on the size and thickness. Serve with any nut butter or grass-fed butter.
